Healthy Holiday Appetizer

Hummus
(Makes about 1 ½ cups)
-
1 can (15 ounces)
garbanzo beans, drained and rinsed
-
½ cup plain yogurt
-
3 tablespoons lemon juice
-
1 tablespoon olive oil
-
2 cloves garlic
-
1½ teaspoons ground cumin
-
½ teaspoon salt
-
Pepper
Place all ingredients in food
processor. Cover and process until smooth. (Hummus will keep
in refrigerator for about a week). Serve with fresh veggies
such as carrots, red pepper, jicama and pea pods and toasted
whole-grain pita wedges*.
*To make toasted pita wedges, heat oven to 375 ° f., cut pita
bread in quarters, lightly brush with olive oil and place on a
cookie sheet; bake about 15 minutes.

Appetizer
Yogurt Dip
(Makes about 1
cup dip)

1 cup plain fat-free yogurt
-
2 tablespoons honey
-
1/8 teaspoon ground nutmeg
-
1/8 teaspoon ground
cinnamon
Mix
all ingredients. Cover and refrigerate at least 1 hour. Serve
with fresh fruit such as apple and pear wedges.

Dessert
Apple Crumb Cake
A great
recipe for one of your dinner parties this Holiday Season.
This recipe serves 18 people.

1/2 cup unsalted butter, room
temperature
-
1 cup sugar
-
2 eggs
-
1 teaspoon
vanilla
-
2 cups
all-purpose flour
-
2 teaspoons
baking powder
-
1/2
teaspoon baking soda
-
1 teaspoon
salt
-
1 cup plain
yogurt
-
2 large baking apples, peeled,
cored and diced small (about 2 cups diced apples)
Topping
- 1/2 cup
brown sugar
- 1/2 cups
chopped pecans
- 1
teaspoon cinnamon
- 1
tablespoon unsalted butter, melted
Heat oven to 350 degrees. Grease and
flour an 8 x 8 inch cake pan. In large bowl, cream butter and
sugar with electric mixer until light and fluffy. Add eggs, on
at a time, blending well. Stir in vanilla. In another bowl,
mix together flour, baking powder, baking soda and salt. Add
flour mixture to creamed mixture in batches alternating with
the yogurt; mix until well blended. Stir in apples and pour
into cake pan.
In small bowl, stir together brown sugar, pecans, cinnamon and
butter. Sprinkle evenly over the cake. Bake until top is
golden brown, and a toothpick inserted in the center comes out
clean about 50- 55 minutes. Cool in the pan for 15-20 minutes,
turn the cake onto a wire rack and then invert onto serving
platter. Enjoy!

Christmas Morning Breakfast
Take the stress out of
entertaining with this great do-ahead dish for your next
breakfast or brunch get-together. Our Easy Breakfast
Casserole can be made 1-2 hours ahead or even the night
before. Also, the recipe can be doubled easily for bigger
crowds. Experiment with other vegetables such as sliced
mushrooms or chopped tomatoes and/or other fresh herbs.

2 cups crusty white bread, cubed
-
3/4 cup shredded Swiss cheese
-
4 eggs, lightly beaten
-
1 1/2 cups fat free (skim) milk
-
2 tablespoons chopped scallions
(use both green and white parts)
-
1/4 teaspoon salt
-
1/8 teaspoon Worcestershire
sauce
-
2 tablespoons diced roasted red
bell pepper
-
2 slices cooked bacon, chopped
-
2 teaspoons chopped fresh basil
-
Pepper to taste
Grease 8 x 8 inch baking dish.*
Arrange bread cubes on the bottom of dish and sprinkle
with cheese. Mix together eggs, milk, scallions, salt and
Worcestershire sauce. Pour mixture over bread and cheese.
Sprinkle with red pepper, bacon and basil. Season with
pepper. Cover and refrigerate for 1-2 hours or over night.
Heat oven to 325 degrees. Bake 50-60 minutes until top
is golden and eggs are set. Cut in four squares and serve.
*If doubling recipe, bake in a 9 x 12 inch dish.
